So here I am living it up in the mountains now and have way too much zucchini in the garden. So we process it and freeze it.
Begin by washing and slicing your squash.
Pat to dry with many paper towels or cloth toweling.
On wax paper or parchment paper lined cookie sheets, arrange the slices in single layers not touching.
Freeze overnight. When completely frozen, put them into labeled freezer bags and use in stews, soup, stir fry or as fried zucchini within 6 months.
The garden is going great but autumn is on its way. Planted some of these as an experiment so we'll see how they do. Actually the whole garden was an experiment and it's gone great. All these tomatoes will ripen soon so I'll try and publish how I freeze them.
