Spicy Korean Zucchini Stew

 Hoban Gochujang Jjigae  Korean Spicy Zucchini Stew

Korean Babsang recipe

1 each medium zucchini and potato cut into 1/2 inch bite size pieces. 

1 or 2 scallions or green onions

1-2 green or red chili peppers

1 tsp minced garlic

3 oz pork slices

1 1/2 TBS gochujang (pepper paste)

1/2 TBS Doenjang (soybean paste)

2 cups rinse rice water (ssalddeummul) or 2 cups veg or anchovy broth


Saute pork in a little bit of oil. Add gochujang and doenjang. Sauté for 3-4 minutes. Add a bit of water to keep it from burning. Then add rest of water and bring to boil. Add potatoes, boil for a few minutes then add rest of ingredients. Cook until potatoes and zucchini turn soft. Serve with rice (of course) 

Spicy stir fried pork and kimchi (Maangchi recipe)

 Spicy Stir Fried Pork and Kimchi  Dwaeji-kimchi duruchigi

From Maangchi website: can also use chicken breast or lean beef instead of pork

1 lb pork belly cut into 1/4 inch bite size pieces

1/4 tsp kosher salt

1 lb kimchi chopped

2 tsp plus 1 TBS sesame oil

1 medium chopped onion

1 dae-pa (korean large green onion) or 4 green onions cut into 1 inch pieces

1 carrot small, sliced

1 bunch of enoki mushrooms trimmed and washed

Lettuce or inner part of napa cabbage leaves, washed and drained

One sunny side up egg per bowl or plate

Seasoning Paste:

2 TBS gochujang (pepper paste)

2 TBS gochu garu (pepper flakes)

2 TBS rice syrup (oligodang)

1 TBS shoyu

2 TBS water

4 cloves minced garlic

1/2 tsp ground pepper

Mix together well and set aside.


Stir fry pork, 2 tsp sesame oil, salt and stir for about 5-6 minutes at medium heat. Add kimchi and stir for 6-7 minutes more. Add onion, carrot, green onion and seasoning paste with 1 1/2 cups water. Cover and cook for 12-13 minutes, stir a few times well. 

Uncover and add mushrooms and rest of sesame oil. Turn up the heat to medium high and cook for 2-3 minutes. Remove from heat and serve right away

Meat LOAF, SHMEAT LOAF, I HATE MEAT LOAF

Aaaah Meat Loaf. The food of the gods. Uncle Stevies favorite. Uncle Joeys favorite. Our favorite. So many ways to make it. So many delicious meat loaves made over the years.

You can baste it with ketchup. You can cover it with raw bacon before cooking. Baste it with BBQ sauce, teriyaki sauce, thai chili sauce, thai sweet chili sauce before baking.

Don't have to use a loaf pan, can use a pie tin or a cake pan. Just a pan and if it's a lower sided pan then adjust your cooking times less.

Lately it's trendy to put little loaves in muffin tins. How special and original of you all. I put mine in a muffin tin shaped like fekkings X Wings and Tie Fighters that's how more original I am than all of you. Seriously....

Mix pork and beef together. Pork and turkey. Turkey and beef. Beef and deer. Pork and deer. Turkey and deer. It's the perfect way to cook ground deer and not let anyone know it's deer. Or elk. But with elk, it's drier so you have to add the bacon. Oh meat loaf, how we love you.

Here are a bunch of meat loaf recipes. You don't have to follow the rules with meatloaf. Use egg as a binder, milk or water as a liquid or even bacon grease. Bread crumbs, crackers or oatmeal as a filler, we won't judge. And meat loaf always makes a fantastic sandwich the next day. Just don't over cook it and make it dry, that's the unforgivable sin of a good cook.

Megans Meat Loaf
(I've known Megan since I was 11 years old. She could make a meal out of nothing. She also would make this when getting home from work, put it in the oven, then shower and make a bunch of side dishes while chasing Nick who would be getting into some sort of mischief)

1 lb hamburger
1 diced onion
1 diced green bell pepper
salt, pepper, garlic powder
ketchup
mustard
2 eggs

Mix it all together, drop in a loaf pan. Bake at 350 for 50-60 minutes.


Edith Bunkers All in the Family Cookbook meatloaf

(the first meatloaf I kept making for you guys before I figured out to just wing it)

1 1/2 lbs ground beef
3/4 cup quick cooking oats
2 eggs
1 small diced onion
1/2 cup tomato sauce
1/2 tsp salt
1/4 tsp pepper

Mix all together. Put in loaf pan, bake at 350 for one hour. (after looking at this, it's rather bland. Make it for bland people or spice it up with some bbq sauce on top)


Khal-Bi Meat Loaf

2 lbs ground beef
4 slices bread cut up small or crumbed
3/4 cup water
1 egg
2 chopped fine green onion
2 pkgs Noh Khal-Bi seasoning packets

Mix well, loaf pan, bake well for 45 minutes at 350.


Moms Meat Loaf that's just amazing and never the damned same. Ever. It's basically this:

1 1/2-2 lbs of ground meat
1 cup binder of oatmeal or bread or crushed crackers or panko, or bread crumbs
1/2 cup milk or water
2 or 3 eggs
3-4 good shakes of Worcestershire sauce or shoyu or Bbq sauce or ketchup n mustard
some herbs like italian seasoning or mrs dash
some salt, maybe seasoned salt or garlic salt
garlic either minced or granulated just some garlic

Put disposable food grade gloves on. Mix that crap with your hands. Shape into whatever pan I grab. Baste a good layer of: ketchup, bbq sauce, thai chili or sweet sauce, slice or two of bacon or dab of bacon grease.

Bake at 350 for 45 minutes to an hour.

More meat loaf recipes. You get the gist of it. These are from basic old recipe books. Mix well, bake at 350 for almost an hour depending on pan. And if you haven't already figured it out: meatloaf is basically lazy meat balls. Mind blown, right? Yeah, it's basically the same thing. Just eliminates a bunch of steps and no white or tomato sauce involved to cook in for hours.

So look these over and get the pattern in your mind about meat loaf. It's so easy. I'll only add to this page unusual recipes that stand out. Just meat loaf.

Meat loaf 1

1 1/2 lb ground beef
1 egg
1 cup oatmeal or bread crumbs
seasoning
dot with butter before baking

Meat loaf 2

1 lb ground beef
1 lb ground pork
1 cup bread crumbs
2 cups milk
2 eggs
1 minced onion or green pepper

Sangkap or Pork Guisantes


Best Sangkap can be found in Waipahu, Oahu at Elena's. There used to be a Las Vegas location but sadly it's no more. Since I can't go jetting off to Hawaii any time, here's what we eat to tide us over. Use pork chops, more better. Rufina is our family brand of patis (fish sauce). Make sure it's Filipino patis as Thai fish sauce and Vietnamese fish sauces have a different flavor style. 

First step make rice. Wash 3 times, then cook in rice cooker.

Sangkap or Pork Guisantes

1 1/2 lb lean pork, sliced into 1x1 1/2 pieces
1 TBS oil
2 cloves garlic, minced
1/2 cup water
1 can 8 oz tomato sauce
1 1/2 tsp apple cider vinegar and patis (or more to taste)
2 tsp shoyu
1 stick cinnamon
1 bay leaf
salt
pepper
1 or 2 peeled and diced potatoes
10 oz package of frozen peas
1/2 cup pimientos (optional because you kids wouldn't eat them)

Saute pork and garlic. Add potato. Stir. Then add water, tomato sauce, vinegar, patis, cinnamon, shoyu, bay leaf, salt and pepper. Stir occasionally and cover while simmering for about 20 minutes or so. Add peas. Stir well then cover and cook for about 5-10 minutes. Smell the deliciousness and add pimientos. Take out the stick and bay leaf before serving over rice.

Pork Roast with Sauerkraut

3-5lb pork roast
2 large cans or jars of Sauerkraut
1/2 cup water

put one can sauerkraut into bottom of slow cooker or dutch oven. Put roast on top. Cover with 2nd can of sauerkraut. Slow cook 6 hours high, 8 hours low or roast in 325 oven for 2 1/2 hours, adding 1/2 cup or more water if needed (watch it). 

Pork Adobo

1 large pork roast, cut into large cubes
1 cup apple cider vinegar
1/2 cup shoyu
5 cloves garlic, crushed
1/4 tsp salt, pepper
2 bay leaves
1/2 cup water

put all into slow cooker and cook on high for 6 hours, low for 8 hours. Can also cook on stovetop until meat is cooked through and tender.

You can also do chicken and beef this way.
For chicken thighs,  cook in large square pan covered in foil in oven at 350 for an hour.

Green chili pork roast

I cook this in the slow cooker 8-9 hours on low, 6 hours on high. ONO! or delicious. Shred the meat and use it for carnitas, tacos, burritos, enchiladas or just eat it with some hot tortillas. Freezes well in bulk.

1 large pork roast (5-7lbs)
2 cans stewed tomatos
1 large can diced green chilis
2 jars Herdez tomatillo salsa

Pour all of it with 1 cup water into slow cooker. Cook. Eat. That simple.

You can also do the same with a bunch of boneless chicken, frozen or fresh. Freezes well, too.

Pork Roast

Moms Pork Roast

1 large rolled boneless pork roast
olive oil
white wine
garlic
onion
herbs
salt n peppa

Brown that roast in some olive oil over stove in a large dutch oven or doufeu (the big pot with funny lid, just google it).

Pour over it 1-2 cups white wine, some garlic or full cloves of garlic, peeled of course. Sliced onion, herbs and salt n peppa. Add a little bit of water for good measure. Bake in oven at 350 for a few hours. If want it to be more tender after a few hours, turn the heat down to 200 and let it slow finish for a few more hours. 4 or so in total. add water as needed to keep some moisture in there. Make gravy with the juice.
